CRUSHED COCOA CAKE

The cocoa cake is a large, circular and solid block resulting from the heavy pressing process and filtering which was applied to the cocoa liquor to extract the fat it contains. Retaining the intense cocoa aroma and flavor, it is then crushed to be used in further processes.
